Hi everyone!  I’m Mary Beth from Cupcakes and Crinoline and I am thrilled to pieces to be here at Kim’s today sharing one of my favorite easy summer dessert recipes with you.

This is the perfect time of year for fresh fruit and grilling and when you combine the two you are going to be a hit whether you serve this to family or friends.  You can make the berry sauce up to 2 days in advance so if you are entertaining your prep time will be cut to a minimum which means less kitchen time and more guest time.

How to Grill Peaches

Ingredients: (Printable version below)

1/2 pint fresh raspberries

1 cup strawberries hulled and quartered

2 to 3 tablespoons sugar {start with less ~ you can always add more to taste}

4 large ripe peaches, halved and pitted {each peach will serve 2}

2 tablespoons melted butter

Sugar for sprinkling on your peaches

Fresh mint to garnish

1.  Make your sauce ~ combine the raspberries, strawberries and sugar in a food processor and process until it is a puree.  It will be the consistency of tomato soup.

2.  Remove from processor and strain over a bowl pushing out the raspberry seeds as you strain it.  They are small so the smaller the strainer holes the better.   I did this in batches rinsing out my strainer in between each batch.

3.  Cover your sauce and refrigerate until chilled; up to 2 days.

4.  Preheat your grill to medium high.

5.  Prepare your peaches by brushing each fleshy side with the melted butter and sprinkling with sugar.

6.  Place your peach halves flesh side down on the grill directly above the flame.  Cook for 5 to 10 minutes until the peach is slightly softened.  If  your peach is very ripe it will require less time on the grill.
