How do you plan for grocery shopping?

What’s your first thought? Dread or excitement? Do you have a certain day? Once a week, multiple times a week? Do you arm yourself with a list and coupons ready to tackle the store? Or do you just wing it and hope for the best?

We keep a list and don’t hate me, but my husband does 90% of the shopping on Sunday afternoon. I secretly think he does this so he can bring home things not on the list, like sugar cereal and pepperoni sticks.

I always place a few staples like beans, tomato sauce, olives etc…so I have them on hand for last minute recipe plans………like the one I did tonight!

I don’t know who was more excited….me or my son? You can thank me later, but after hearing what he wanted to throw together, I suddenly decided to offer him unlimited video game playing for the afternoon. Even at 13, it’s all about distraction. I didn’t want to squash his creative side, but trust me…marshmallows, VELVEETA® and Ro*Tel® didn’t sound too appetizing.

I thought I’d combine the idea of Chicken N’ Dumplings, Tamale Pie and Taco Soup. It turned out delicious! Everyone was pleased and ate their dinner.

After a few minutes I had enough juice to take a better shot

Tamale Dumpling Soup

  • 32oz Chicken stock
  • 1 lb ground turkey
  • 1 can olive 3.8oz
  • 1 can re-fried beans 16oz
  • 1 can RO*TEL®
  • 12 oz VELVEETA®
  • 1 can pinto beans 15oz
  • 1 can tomato sauce 15oz
  • 1 cup water
  • 1 Tablespoon crushed garlic
  • 1 Tablespoon chili powder
  • 1 Tablespoon Cumin
  • 1 teaspoon salt

In dutch oven or large pot, brown ground turkey with spices and garlic. Add chicken stock with everything except re-fried beans and VELVEETA®. Bring to a boil. Add VELVEETA® and re-fried beans. Stir until blended. Add dumplings.

Corn Bread DUMPLINGS

  • 1 cup corn meal
  • 1 cup flour
  • 1/4 cup sugar
  • 1 tablespoon baking powder
  • 1 tsp salt
  • 1 cup milk
  • 1/3 cup oil
  • 1 large egg
  • 1 to 2 cups baking mix until thickened

Drop gently into soup in large spoonfuls along the edge and one in the middle. Don’t worry if they sink. Cover and keep on low heat for 20 min. Serves 6.

I can guarantee this taste better than what my son was planning.
